I don’t know about you guys, but winter never seems like a season that I can thrive in. I’m someone who basically lives in shorts and Oregon’s winter attire is not conducive to anything other than down jackets, scarves, and super-rugged Carhart boots. That’s not to say there aren’t any bright spots: this place looks beautiful all blanketed in snow, I now fully appreciate the gym’s sauna, and I can (guilt-free) spend a Sunday on the couch doing nothing except reading books. Yet I still find myself missing sunny weather, and thus inspired a handful of am smoothie-making adventures.
In celebration of my pipes finally unfreezing (eighteen days later), I had to share this tropical smoothie recipe that I finally perfected. It’s packed with fruit, coconut milk, plus tons of other tasty yet good-for-you ingredients. I can almost picture Hampton Beach in lieu of the frozen, snow-packed downtown view from my desk when I’m drinking it (slight exaggeration, but still). Recipe makes enough for two, but if we’re being honest, I usually drink all of it and it’s filling enough count as breakfast.
Tropical Smoothie Ingredients
- 1 cup coconut milk (can be found in the dairy aisle, I use the So Delicious brand)
- 3/4 cup frozen mango chunks
- 1 banana
- 1 scoop of vanilla protein (I use this brand, but any will work)
- 2 TBSP milled golden flaxseed (I use the brand Wild Roots).
- Add the milk & mango first, blend until smooth.
- Add everything else.

Also can I mention how spectacular The Desire Map is (it’s the pink book in the above picture)? I started it a few weeks ago, going through the exercises, and being inspired. Definitely a good read for the beginning of 2016. <3
